Evans & Tate Wild Cape Cabernet Sauvignon / Sauvignon Blanc

ABOUT

Wild Cape is a celebration of the raw beauty of Western Australia’s South West and is inspired by the spectacular coastline and distinct regional characteristics of Margaret River wine.

Through photographer Andrew Semark’s epic and dramatic ocean photography, Wild Cape embodies the essence of the region where dramatic waves crash onto the coast and world-class wines are produced in this remote, pristine part of the world.

WINEMAKING NOTES

Cabernet Sauvignon

Both the Cabernet Sauvignon and Malbec fruit were harvested in the early hours of the morning and cold soaked for five days on skins before the onset of fermentation. After another seven days of fermentation for the Malbec and twelve days for the Cabernet, each batch was pressed off skins into used French oak barrels. The pressings fraction was blended back into the free-run for both varieties. A portion of the Cabernet was racked to new French oak hogsheads, which represents around 15% new oak in the final blend.

The wine was then matured in barrel for 14 months, with each barrel being topped monthly before select barrels were carefully blended.

Sauvignon Blanc

An array of pick times were chosen to capture the myriad of aromas and flavours that Sauvignon Blanc vines produce.

A small parcel from a Karridale vineyard was pressed through to soften acidity and to impart aromatic and textural complexity. Another small parcel from a Wilyabrup vineyard was allowed to cold soak on skins for 24 hours before pressing and fermenting the clear juice. A small portion (13%) was allowed to undergo wild fermentation in used French oak puncheons (500L) to impart texture.

TASTING NOTES

Cabernet Sauvignon

Colour – Purple black showcasing a beautifully intense, deep colour from the inclusion of Malbec.
Aroma – Ripe dark fruits and layered, complex savoury spice with a lovely perfumed lift.
Palate – Blackberry, olive and dry earth mingle with a touch of bright leafiness defining an elegant palate. These driving flavours are matched with a lovely dry, fine tannin grip.

Sauvignon Blanc

Colour – Light and vibrant with a youthful lime green tint.
Aroma – Lime leaf, fig, lychee and mango skin, overlaid with notes of cut grass, lime zest and white flower.
Palate – A salivating, refreshing acidity bursting with lychee, lime cordial and tropical fruits. A crunchy, textural element adds complexity from a small parcel wild fermented in used French oak.
